I love bitter melon – hated it as a child, but I sure do love it now! I’ve had it as a soup, as a salad, in a stew, and with scrambled eggs. All are delicious! The easiest one to make, of course, is the scramble!
All you need is bitter melon (3), eggs (6), olive oil (1 tsp), and soy sauce (2 tsp). I usually do a 1:2 ratio of bitter melon and eggs, but I only had 5 eggs this time around. It worked. You can be fancy and add onions and garlic if you want, but I like to keep it simple.
Step 1: Wash and cut the bitter melon in half, then in quarters lengthwise. Use a spoon to carve out the core/seeds, and toss that part out.
Step 2: Slice it into thin angled pieces. You don’t really have to cut it at an angle; I’m just trying to be fancy since I don’t bother with onions and garlic.
Step 3: Add a teaspoon of olive oil to a pan on high heat. Then, add the sliced bitter melon, and drizzle a teaspoon of soy sauce over it. Stir, lower the heat to medium, cover, and let it cook for about 5 minutes.
Step 4: Remove the lid, turn the heat back up, and add the eggs. Stir it up so that the eggs mix with the bitter melon. Drizzle another teaspoon of soy sauce over it. Add more soy sauce if needed.
Top with cracked pepper & enjoy! I like to add a little bit of Sriracha too!
