My husband loves banana nut bread. He also loves Madeleines. He used to buy all the Madeleine packets at Starbucks until they changed the recipe/shape. They now sell the shorter shell-shaped ones, and he doesn’t like that.
So yesterday, I decided to make a hybrid of his two favorites. I was originally going to make regular Madeleines, but I only had a quarter stick of butter, and I was too lazy to run to make a trip the market.
Since I happened to have ripe bananas and all the ingredients I needed to make banana bread, I went ahead and made what I’d like to call, Bananaleines!
The ingredients are basically the same as my banana nut bread recipe. The only difference is that you’ll bake them in a Madeleine pan. I got mine at Bed, Bath and Beyond for $17, but I used a $5 off coupon (always check for coupons).
This recipe will make 2 dozen to 30 bananaleines, depending on the size of your pan/mold. I doubled the recipe and was able to make almost 5 dozen!
3 ripe bananas
1/3 cup apple sauce
1/2 cup honey
1 tsp pure vanilla extract
1/2 tsp salt
1 cup whole wheat flour (or all purpose flour)
3/4 cup oats
1 tsp baking soda
1/4 cup hot water
pecans or walnuts (optional)
1) Dissolve the baking soda in the hot water. Then, place all the ingredients in a mixing bowl except for the pecans. Smash the bananas, and whisk everything together.
4) Remove them from the oven. Use a butter knife to gently lift them from the pan.
Let them cool down a bit. Then, enjoy! I know my husband did. He ate a dozen right when it came out of the oven.
