Bitter melon is definitely an acquired taste. We hated it as kids (because they really are bitter), but we’ve grown to love it as adults! If you’re feeling adventurous in the kitchen, you can also try our Bitter Melon Soup recipe. For now, let’s start off with this very easy scramble recipe.
4 bitter melon gourds
3 green onions
1/2 yellow onion
1 tsp olive oil
1 tsp soy sauce
garlic chili sauce (optional)

1) Wash the bitter melon gourds, and cut them in half at an angle. Cut each half into fourths (the long way), and use a spoon to remove and toss all the seeds. Then, cut them into thin slices at an angle.
2) Dice the onions.
3) Drizzle olive oil into a pan on high heat. Sautée the yellow onions first. Once the onions are soft, add the bitter melon, and mix it up.
4) Turn the heat down to medium low, and cover for about 5 minutes, stirring half way through. Then, push the onions & bitter melon over to one side of the pan, add a dash of olive oil, and fry the 6 eggs. Scramble the eggs, and mix it all up with the bitter melon. Add a dash of soy sauce and a handful of green onions.
Top it with fresh cracked pepper, green onions, and garlic chili sauce. Add soy sauce as needed. Enjoy!
