Did you know that you can make cookies from boxed cake mix? I didn’t! Why didn’t you tell me?

It’s pretty neat because with all the different types of cake mix out there, you can make cookies in flavors and colors that you normally wouldn’t. And from what I’ve seen, boxed cake mix is usually much cheaper than the “ready to bake” cookie dough that you break apart.
The cookies turn out slightly thicker than your average cookie, with a texture that is similar to a brownie, but not nearly as dense.

I love strawberry cake, so I thought I’d give strawberry cookies a try.

You need three ingredients:

1 box of cake mix
2 eggs
1/2 cup of vegetable oil

All you do is beat the eggs into the oil, then combine that mixture with the cake mix. Scoop onto a cookie sheet. Bake for 12 minutes at 350 degrees.
That’s all there is to it.

      Large eggs are best. I think that’s what they normally sell at the market.
