This cheesy shrimp crostini is so delicious! It’s such a hit at every gathering! I can literally eat a million of these! Since my nieces and nephews are allergic to shrimp, I made this batch using imitation crab and set a portion aside for them. Then, I added shrimp to the rest of the mixture. You can include imitation crab if you want, but the original recipe doesn’t call for it. I enjoy it either way.

This recipe is plenty for a party of 16-20. Feel free to cut the recipe in half or fourths for smaller parties.

INGREDIENTS:
4 baguettes (market bakery will slice it for you)
1 lb shrimp
1 tbsp butter
6 sticks imitation crab (optional, chopped)
1 bunch green onions (about 6 stalks chopped)
2 cups mayonnaise
4 cups grated cheddar cheese
1/4 tsp salt
1/2 tsp garlic powder
1/2 tsp fresh cracked pepper


HOW TO
:
1) Chop and mix all the ingredients together.  (If you don’t have anyone allergic to shrimp at your party, you can add the sautéed shrimp here too).  Otherwise, don’t add the shrimp until after you’ve set a aside some crab-only mixture, as seen here.

2) Peel and sautée the shrimp on high heat.  Shrimp cooks very fast, so remove it from the burner as soon as it turns orange in color.  Let it cool.  Then, chop it into small pieces, and add it to the mixture.  

3) Spoon the mixture onto sliced baguette pieces.   Pop them in the oven at 350 degrees for 20-25 minutes until the cheese melts and the crostini is toasted. It should turn nice and golden.

These are best when they are fresh out of the oven.  So good! Enjoy!
