Maroon 5’s song “Sugar” has been on the radio a lot lately and I’ve grown to love it. The music video is pretty cool too!

It came on my Spotify playlist when I was making these sugar sweet coconut macaroons last night, and I was dancing around my kitchen like an idiot. There is no link to a video of that, so don’t even ask.

In honor of my new favorite song, I’m calling these my Coconut Macaroon 5’s.

To make them, you will need:

12 oz of sweetened, shredded coconut
1 can (14 oz) of sweetened, condensed milk
2 large egg whites
1 teaspoon of vanilla extract
1/4 teaspoon of salt

Mix the coconut, condensed milk, and vanilla extract together in a mixing bowl.

In a different bowl, combine the egg whites and salt. Beat the egg whites until it starts to foam and stiffen. When you’re able to make little peaks with the egg foam, you’re done. If you’re upper middle class and you have some kind of fancy mixer, this will probably take you a few seconds. I did this with a whisk because I’m a poor slob, and it took me a couple of minutes.

Combine the egg whites with the coconut. Mix it together thoroughly.

Form small mounds with an ice cream scooper. Place on cookie sheets lined with parchment paper.

Bake at 325 degrees for 20 minutes. When they’re done, they should be lightly golden on top.

This recipe should make around 2 dozen. Store in an airtight container, and they’ll last up to a week.
