I love coming home from work to the smell of dinner cooking. Since I’m single (and ready to… ugh, forget it. I already regret it), I cook my own meals, so coming home to an already prepared dinner doesn’t really happen. That is, unless I’m using one of my favorite appliances in my kitchen: the Crock Pot.

The best part about Crock Pot meals is that they are so effortless. I throw everything in in the morning, then it’s ready to serve as soon as I get home. Those who know me know that I love eating as soon as possible!

Since it’s summertime, I’ve been craving barbecue, so these Crock Pot Pulled Chicken Sandwiches have been a real treat.

To make them, you will need:

4 skinless, boneless chicken breast halves ( I only had three breasts, so I threw in a couple of drumsticks and a thigh)
1 (18 oz) bottle of barbecue sauce
3 cloves of garlic (chopped)
1/4 cup distilled white vinegar
1/2 cup brown sugar
1 tsp of black pepper
1/2 tsp of crushed red pepper
1/2 tsp of salt
Hamburger buns

Place the chicken breasts in the Crock Pot.

Whisk the garlic, vinegar, brown sugar, barbecue sauce, black pepper, red pepper, and salt together in a bowl.

Pour the mixture over the chicken.

Cook on low for 4 to 6 hours.

Once cooked, shred the chicken using two forks. There will be a lot of sauce, so let the chicken soak it up, then strain it a little before putting it onto hamburger buns. This will keep the buns from getting too soggy.
