I had walnuts with my yogurt yesterday morning because I was out of granola, and it was DISGUSTING!  For whatever reason, the walnuts were so bitter!  It was not yummy at all.  So last night, I decided to try to make my own granola, and it turned out great!

Ingredients:
4 cups oats
1 cup chopped almonds and/or pecans
1/2 tbs ground cinnamon
1/2 tsp salt
2/3 cups honey
1/3 cup apple sauce (replaces oil)
1 tsp vanilla extract

HOW-TO:
Place all dry ingredients (oats, nuts, cinnamon, salt) into a bowl, and mix everything together.  In another bowl, mix all the wet ingredients together (honey, apple sauce, vanilla extract).  Pour the wet ingredients over the dry, and mix it all together. 

Line a cookie sheet with parchment paper, and spread the mixture across the sheet.  Bake at 375 degrees for a total of 20 minutes, stirring the mixture half way through.

I had it the next morning with yogurt, and it was a million times better than the walnuts!
