Like the Chicken Enchiladas Casserole recipe I posted a few days ago, this is a total cheat recipe as well! It’s just a matter of mixing all the ingredients together, and it’s so easy and delicious! My husband loves it!
Some things just aren’t worth making from scratch to me, and this macaroni salad definitely falls under that category. The ingredients cost me a total of about $15 and saved me about 2 hours of prep time. I’m not sure how much it would cost to make it from scratch, but I’m guessing it wouldn’t be far from what I paid, plus all that time!
1 rotisserie chicken (use 1 breast & enjoy the rest another time)
1 tub of Resers Macaroni Salad (1 lb)
1 can of pineapple chunks (8 oz)
1 cup of dried fruit (cranberries/raisins/currants)
3/4 cup of grated sharp cheddar cheese
A pinch of salt, pepper & garlic powder (optional)
2) Drain the syrup from the can of pineapples. Cut the chunks into smaller quarter pieces.
3) Place all of the ingredients into a mixing bowl, and gently stir it together.
Now enjoy. So easy and good!
No one needs to know you didn’t make it from scratch! 😉
