My husband loves when I make banana nut bread, and I love that he loves it! My Dad loves it too. And the great thing about this recipe is that IT’S SO HEALTHY! NO TABLE SUGAR. I use honey instead, which is a better option for my Dad since he has diabetes. NO OIL. I replace it with apple sauce. And using oats allows me to use less flour. Win-win!
The most “difficult” part about making this recipe is stocking your pantry with all the ingredients, but once you do that, everything else is a piece of cake. Or should I say a piece of bread? Lame.
This recipe will make three mini 3×5 loaves (or one 9×5 loaf). I usually double the batch because my husband will literally finish it in one day.
Here’s what you’ll need:
3 ripe bananas
1/3 cup apple sauce
1/2 cup honey
1 tsp pure vanilla extract
1/2 tsp salt
1 cup whole wheat flour
3/4 cup oats
1 tsp baking soda
1/4 cup hot water
1/2 to 1 cup pecans or walnuts
1) Dissolve the baking soda in the hot water. Then, place all the ingredients in a mixing bowl. Set some pecans aside for the topping. Smash the bananas, and whisk everything together.
2) Grease each loaf pan with a small drop of olive oil, and spread it around with a paper towel. Pour the mix into each loaf, leaving about half an inch on top for it rise. Top it with the pecans you set aside.
3) Bake at 325 degrees for one hour.
Easy, healthy, and delicious too – at least my husband and Dad seem to think so! I hope you enjoy it as much as they do!
