My old coworkers and I (The Orcas) got together today from brunch. Everyone brought a little something something, so we had a nice spread. Our host made an egg casserole and a fruit tart, while others brought sweet country potatoes, fruit salad, cheese & crackers, mimosas, and even Korean sushi rolls!
I brought mini turkey and cheese croissant sandwiches, which are super easy to make, especially for a party. I’ve done it before for an office party too. It’s very quick, easy and delicious!
2 Dozen Mini Croissants
1 Pack of Turkey Lunch Meat (11 oz or 12 pieces)
8 Slices of Cheese (I used sharp cheddar and Swiss).
2 Baking Dishes
Parchment Paper (optional)
I was able to prep these in under 10 minutes. It’s all about being efficient with the assembling process. Here’s HOW-TO:
1) Cut the croissants along the center to form a top and bottom sandwich piece. Then, place all the croissants into the baking dish.
2) Stack and cut the cheese into thirds. Then, place a piece of cheese into each croissant. I did one filled one dish with cheddar and the other with Swiss.
3) Stack 12 pieces of lunch meat, and cut the stack in half. Place the turkey inside the croissant on top of the cheese.
4) Bake at 350 degrees for 10-15 minutes until the cheese melts.
So quick and easy! Perfect for a party!
