I love me some Pico de Gallo, especially during the summer. It tastes so fresh, and it’s really easy to make. One of my favorite things to eat it with is grilled oysters. Mmm, grilled oysters! That reminds me…I’m due for some oysters in my life. Looks like I’ll need to make that soon. What, it’s strictly for the blog! Ha!
Besides oysters, I also love Pico de Gallo with street tacos and chips, and since Steel was coming over for a low craft night, I had to think of something quick and easy for us to enjoy. I decided to make fish tacos with rice and beans, and fresh pico de gallo salsa with chips. Steel immediately wagged his tail when he heard what was on the menu. He always wags his tail over anything edible. As do I. Obviously.
1 Jalapeno Pepper
1/2 Bunch of Cilantro
Salt & Pepper
Chop up all the fresh ingredients, and put it in a mixing bowl. I like to cut off the stems of the cilantro, but a lot of people include them, so it’s up to you. And if you like a nice kick, include the seeds of the jalapeno when you chop it up. Otherwise, remove the seeds. I forgot to grab a jalapeno pepper while I was at the grocery store, so I used a Thai chili I already had instead. It worked.
Sprinkle salt, pepper, and garlic powder over it.
Squeeze in the juice of half a lime.
Gently mix it up, and enjoy with chips!
