I don’t have a valentine this year. No big deal. I don’t need a person or a holiday to give me an excuse to stuff my face with chocolates.

There are only two weeks until Valentine’s Day!

Have you ordered flowers, made a restaurant reservation, or swiped right enough times on Tinder to find yourself a date?

Well, if you need help thinking of a sweet, heart-shaped dessert for your sweetheart, our ice cream sandwich is sure to melt your Valentine’s heart.

You will need:

1 package of “Ready to bake” sugar cookie dough
Strawberry ice cream
Heart-shaped cookie cutter

You’re going to create two large cookies, so you’ll need to use equal amounts of pre-cut cookie dough pieces for each large cookie.
Bake the cookies by following the directions on the package.
After they’re done baking, let the cookie pieces cool completely. It’s important to do this, otherwise the ice cream will melt too fast and you’ll have a bad time.
Spread a thin layer of strawberry ice cream on one of your cookies. Put the other cookie on top and press down gently.
Use the cookie cutter to cut out your pink and white ice cream sandwiches.

The red cookies pictured are strawberry cake mix cookies that I blogged about the other day. They’re delicious on their own and provide that deep red color that’s perfect for Valentine’s Day, but they didn’t work very well for the ice cream sandwiches. Cake mix cookies are a little more dense than a normal cookie, a bit like a brownie, but certainly delicious. You can try to use them for the ice cream sandwiches, but it wasn’t easy. I hope you have better luck than I did, but I recommend using cookie dough for this recipe.
